Planqué entre une brasserie et un resto gastronomique, La Rumeur, nouveau spot de la Place Royale régale le bouche à oreille bistrovore. « Avant d’ouvrir, on a entendu tellement d’inepties que le nom est venu comme une évidence ! 

lance le couple fondateur et trentenaire, Philippe Arriudarré et Jessica Lopes, un duo biberonné au sérail de la restauration. Un pied de nez aux mal pensants. Et toque. Car dans cette pépite de mini-cantine, ce n’est pas le décor cosy – murs noirs et tables bistrot – qui attire mais la chaleur de l’accueil et les saveurs de l’assiette. Au piano, le jeune chef talentueux, François Le Bris, et son second Lorenzo Ventura, passés par les fourneaux d’Alexandre Paget du Jeu de Paume, le restaurant de l’Hôtel Beaumont. « On a beaucoup appris à ses côtés. Comme lui, notre objectif est de proposer des produits frais et de proximité, de faire découvrir des parfums très originaux. » Experts en cuissons des viandes et du poisson qu’ils aiment particulièrement travailler cru, confit ou cuit, François et Lorenzo jouent avec les légumes, croquants de préférence et les sauces extasiantes à souhait. Fidèles aux bons fournisseurs – Carrasco & fils pour les primeurs, Jean-Noël Castaing pour les fromages et Kamok pour le pain -, les deux compères proposent à une clientèle décontractée et de tous âges, des plats bien ficelés et créatifs, avec en clôture vitaminée une tarte citron fraise basilic déroutante. L’été, place aux tapas et salades, jamais classiques et toujours revisitées, à l’ombre des tilleuls de la place emblématique. C’est bon et sans chichis, juste parfait pour le prix.

Nestling between a brasserie and a gastronomic restaurant, La Rumeur, a new eatery on the Place Royale, is creating a buzz among bistro-goers in Pau. “Before we opened, we heard so many absurdities that the name seemed obvious!”

laugh the couple of thirty-somethings and owners of the restaurant, Philippe Arriudarré and Jessica Lopes. Both learned their trade in the inner circle of the catering business, and La Rumeur is a real triumph over the nay-sayers. Because in this little gem of a canteen, it’s not the snug interior – black walls and bistro tables – that attracts the clientele, but the warm welcome and the delicious food. Handling the heat in the kitchen are the young talented chef François Le Bris and his sous-chef Lorenzo Ventura, both having toiled over the hot stoves with Alexandre Paget in the Jeu de Paume restaurant at the Beaumont Hotel. “We learned a lot with Alexandre, and share his aim of offering diners fresh, local produce and enabling them to discover some very original tastes and flavours.” Experts in cooking meats and fish that they particularly enjoy preparing raw, cured or cooked, François and Lorenzo play to their hearts’ content with different vegetables, preferably al dente, and sauces to die for. Loyal to their quality suppliers – Carrasco & Fils for fruit and vegetables, Jean-Noël Castaing for the selection of cheeses and the Kamok Bakery for bread – the two partners in crime serve their relaxed clientele of all ages with beautifully finished, creative dishes. And to round off the menu with a vitamin-packed punch, a surprising lemon, strawberry and basil tart. Come the summer, the tapas and salads take pride of place, but are never the same and always given an original twist, to enjoy in the shade of the lime trees lining the iconic square. The food is good, without frills, and at just the right price.
