L’aventure,
c’est l’aventure

Il avoue avoir trop raconté l’histoire drôle à l’origine du nom du resto. Message reçu ! Mais François est plus loquace sur son parcours – école hôtelière, direction de restauration en France et à l’étranger, boutiques à Pau.

C’est pour la vue exceptionnelle face aux Pyrénées qu’il craque et décide avec sa femme Prisca d’ouvrir ce bistrot cosy. « Je suis versatile, je m’ennuie vite dans le business, je n’aime rien tant que développer de nouveaux projets » lance-t-il. Son domaine réservé, c’est l’accueil, « mais avec ma patte, entre impertinence, convivialité et efficacité ! » Plus discrète et mesurée, Prisca a chapeauté la déco trendy aux accents scandinaves, suit la com’ du lieu, le service en salle. Bref, a l’oeil sur tout tandis que lui a réponse à tout ! Une alliance de l’eau et du feu domptée par l’aérien des assiettes gourmandes du chef Pierre-Adrien Ferran qui travaille une bistronomie inventive. « Entreprendre, oser, incarner les lieux que l’on investit, faire bouger les codes », c’est notre ADN racontent en choeur Prisca et François. Après un Pékin Express gagné en 2011, ce goût du challenge a poussé François à concourir… et à gagner la semaine pyrénéenne de l’émission « L’addition s’il vous plaît ». Résultat, le poulet va peut-être faire des petits et le couple d’aventuriers gambader en famille vers d’autres contrées…

The compelling zest of adventure

He admits he has told the funny story which gave the restaurant its name rather too often. Message received and understood! But François is much more loquacious when it comes to talking about his career – hotel and catering school, manager of restaurants in France and abroad, different boutiques in Pau.

When he clapped eyes on the restaurant with its breath-taking view of the Pyrenees, he simply couldn’t resist, and with his wife Prisca, decided to open this cosy bistro. “I’m flexible and I get bored very quickly in business, so there’s nothing I like better than developing new projects” he affirms. His prerogative is welcoming customers “but in my own style, with a mixture of boyish impertinence, friendliness and efficiency!” Prisca, more discreet and down-to-earth, masterminded the cosy interior design with a warm Scandinavian touch. She keeps tabs on the com’ for the restaurant, the table service; in short, she keeps her eye on everything while he has an answer for everything!  A striking marriage of fire and water, revolving around the ethereal delights of the dishes created by chef Pierre-Adrien Ferran who serves an inventive cuisine. “Being proactive, daring to take risks, reflecting the place we work in, pushing back established limits, it’s in our DNA,” chorus Prisca and François. A taste for challenges which motivated François to take part in and win Pékin Express in 2011 and, more recently, the Pyrenean week of the French TV program, “L’addition s’il vous plait” (Can I have the bill, please?).  So maybe the chicken will have a brood, and perhaps the adventurous pair will hit the road, en famille, to discover other lands…
